This dessert pretty much has it all. It’s cold, it’s creamy, it’s crunchy, it’s
chocolate-y, it’s coffee-y.
{Coffee-y: it's a new word.}

Really...how can any dessert with these ingredients be bad?
You’ll be layering coffee ice cream with some chocolate
graham crackers,

…and layers of COOL WHIP Whipped Topping,
{COOL WHIP is so fluffy and beautiful. I'd like to live on a COOL WHIP cloud.}

….but first, you will spike it with a little Kahlua.
{If you don’t do alcohol, feel free to leave it out.}
You’ll also be adding drizzles of fudge sauce…

….Heath bar bits,

…and top the whole thing off with chopped Symphony bars.
Yeah. It’s a
beautiful thing.

Mr. E keeps a mental
“top 10” desserts list. This immediately
shot up into the top 5. It might even be
number one.

Two more things I love about this ice cream cake….
- it serves a BUNCH, like 18-24.
- it gets better as it sits. Make it a day ahead….or two…or three.
You might also want to only make it when you’re expecting
company. Having an ice cream cake that
serves 18-24 in your freezer when you only have a little family of three is,
well, dangerous. To your waistline. I
speak from experience.
Kahlua-Coffee Ice Cream Dream Cake...you need it in your
life.

Kahlua-Coffee Ice Cream Dream Cake
30 chocolate graham crackers
6-8 cups coffee ice cream (set out 15 mins. to soften)
6 cups COOL WHIP whipped topping
4 TBSP Kahlua
10-12 oz. jar fudge topping/sauce
1 cup Heath bits
2 Symphony bars, chopped

Line the bottom of a 13x9” pan with chocolate graham
crackers (each layer should take 7 full grahams and 1 half graham).
In a bowl, stir 3-4 cups of softened ice cream to loosen
it. Use an offset spatula to spread the
ice cream over the graham crackers. Top
with another layer of grahams.
Stir 2 TBSP Kahlua into 3 cups of COOL WHIP. Spread over the graham crackers.
Microwave the jar of fudge sauce for 20 seconds. Drizzle on
half of the fudge over the COOL WHIP layer.
Sprinkle on the Heath bits.
Repeat the layers (grahams, ice cream, grahams, Kahlua COOL WHIP, and fudge sauce), replacing the Heath bits with chopped Symphony bars on
the top.
Freeze several hours until set.
{A bench scraper is an easy way to cut down through the
layers.}

ReplyDeleteThis looks amazing. I think I need to clear a shelf in the freezer! Perfect for Mother's Day dessert.
ReplyDeleteOhh yes, I'd live quite a happy life in a Cool Whip cloud... a Kahlua spiked cloud would be even better! These looks amazing, I can see how it'd be in Mr. E's mental top 5!
ReplyDeleteNot. Safe. In. My. House. Oh dear Lord in the good heavens above . . .
ReplyDeleteOh my, this looks like a dream! Yum!
ReplyDeleteSo simple and delish!
ReplyDeleteI think life just got a whole lot sweeter!! This looks utterly fantastic, and hey! - Guess who just got a new bottle of Kalhua? This Girl!!
ReplyDeleteI love chocolate. I love kahlua. I love heath. I love coffee ice-cream. Did I ever think to combine them all? No. This just might be perfection!
ReplyDeleteNow this is my kind of dessert..coffee, chocolate, ice cream, kalhua..m in heaven just by looking at the clicks :D
ReplyDeleteBathing suit season = YAY for ice cream cake season!!! This looks unbelievably delicious! :)
ReplyDeleteI did a post for them last week...where do I even begin how much I love this recipe of yours. Wow, Bridget! Layers of love. Gosh, heavenly!!
ReplyDeleteWow, wow, wow! Now that's a dessert for me! I hope I can find chocolate graham crackers here in Israel ( or at least some close substitute!).
ReplyDeleteOh my. I agree that it would be a gigantic mistake to make a full size to keep in the house. But I imagine it could easily be halved to fit in an 8x8 (not that it's safer, just less of it!)
ReplyDeleteWhat are you trying to do to us?! ;) Whoa...looks so-so good!
ReplyDeleteOH my heavenly days. Nothing could look better right now, it's torture! I think I'm going to have to run to the grocery store ASAP
ReplyDeleteI am sure they serve this ice cream cake in heaven :)
ReplyDeleteIt's 5am and I can't sleep. This is so wrong and yet so right. My life will not be complete until I make this. Mmm sweet dreams...
ReplyDeleteIt looks absolutely yummy! And it SEEMS simple enough for even ME to make!
ReplyDeleteOh my lord. Had to pin :)
ReplyDeleteHOly heck. No mixer, no stove cake is a good thing!
ReplyDeleteOh I love this! And I'm ignoring the impending bathing suit season to the best of my ability!
ReplyDeleteoh goodness, that would not last long in my house!
ReplyDeleteI'm going to try making this with cold espresso instead of Kahlua so I can take it to my daughter's 5th Grade graduation party. It looks too yummy!
ReplyDeleteI can go w/ putting Heath Bars in coffee cake. What a fun recipe!
ReplyDeleteokay, it's early... "coffee ice cream" cake, not coffee cake, lol!!!
ReplyDeleteOh Bridget. You've outdone yourself on this beauty! It IS a dream cake!!!!
ReplyDeleteDream cake is RIGHT, this is a dream! Looks so amazing!
ReplyDeleteHow gorgeous is this Bridget?! Wow!!
ReplyDeleteOh holy yum! I'm pretty sure this would shoot up to my husband's Top 5, too! I may have to halve the recipe for an 8x8 pan, but I'm certainly making this over the summer!

Anything with coffee, sweets, and ice cream does it for me!
ReplyDeleteYum. You had me at Haagen Dazs...but then you had to go and add toffee bits. That was just mean. ;-)
ReplyDeleteYummy!!!!!
ReplyDeletePart of me is thinking, "Pin this!!!" And the other part is trying to convince her, "Click the red X and no one gets hurt."
ReplyDeleteA Cool Whip cloud sounds tempting, but my first thought was that it would be cold. But...stir in some Kahlua, that would keep you warm! ;)
This my friend is a masterpiece!
ReplyDeleteI can't even say {on a blog} what my G would do if I served this!
We should totally live on a COOL WHIP CLOUD together!
Just sayin!
I love this dessert x a trillion!
Please make it when we come to TEXAS!
xo
This is the easiest most delicious idea ever!
ReplyDeleteI can't wait to make this.
ReplyDeleteDare I make this?! It looks like it wouldn't stand a chance in this house.
ReplyDeleteThis is PERFECT for a party I'm helping with on Friday...but, could it be made with real whipped cream? In advance? Beautiful though it is, I am not a huge fan of the taste of CW (I know, blasphemy!)
ReplyDeleteThanks!
I didn't try it with whipped cream, but I'm sure it would work. :) Enjoy!
DeleteThanks, Bridget!
DeleteCoffee, Kalhua, Chocolate; just a few of my favorite things! Love a good no bake, no mixer recipe. I can't wait to try.
ReplyDeleteHey, wait a second. I couldn't fit into my jeans after just reading your post. Not fair! ;)
ReplyDeleteI do need this in my life!! You are so right!! I want to lick my computer screen right now!! LOL
ReplyDeleteYuummmmm!! My grandma used to make something similar to this, but instead of ice cream she used pudding. And I don't remember any alcohol. Your version takes it to a completely new level. Can't wait to try this!
ReplyDeleteI think I just died.
ReplyDeleteThis is truly dangerous...and who doesn't love a "no-baker" once in a while?! Even food bloggers have days where they don't feel particularly up to baking, but this on the other hand.
ReplyDeleteOh goodness, the Kahlua...you are an evil, wonderful genius. Plus, the fact that this is no-bake makes it even better!!
ReplyDeleteHow long before I serve this do I have to take it out of the freezer? Can't wait for the reviews from my Bunko girls! Thanks!
ReplyDeleteYou can serve it right away. :)
DeletePlease I need and answer, can anyone help me
ReplyDeleteThank you Bridget!! I was getting a little nervous as the girls are almost here. So I will take it out right before serving. Thanks again!
ReplyDeleteBridget this looks AMAZING! I see why Mr E may put this at #1, but I think I need to come over and give my vote!
ReplyDeleteI want to make this for my fam but they are all coffee ice cream haters! (How I survive, I don't know!) Is there another liquor/ice cream combo you would recommend?
ReplyDeleteummm this sounds life changing. I might just have to make this for my mom's birthday tomorrow! lol
ReplyDeleteHeavens to Betsy!!! I need to block this from my mind. At least for the morning.
ReplyDeleteThis looks and sounds SO amazing Bridget!!! You are a genius. :)
ReplyDeleteI definitely want this in my life! I love no bake cakes - yum
ReplyDeleteany suggestions on a substitute for the graham crackers? i have tried several stores but can not find them. thanks
ReplyDeleteI would try chocolate wafer cookies. You could even do plain graham crackers and I'm sure it would still be delicious. :)
Deletethis is fantastic, and I love the suggestion to use chocolate wafer cookies, too. Might try with graham crackers first. Fabulous!
ReplyDeleteThat's all there is to it? Genius and delicious!
ReplyDeletei have to make this :))))
ReplyDeleteSHAME on you!!! That is so sinful.......making it for our weekend cookout...corn hole, horse shoes...join us....love your blog

ReplyDeleteSoftening up ice cream doesn’t have to be difficult, and there are plenty of tips and tricks to turn your Neapolitan nightmare into a soft, scoopable or spreadable ice cream dream.
ReplyDeleteBuild on a cake's flavor by underscoring it with contrasting tastes, like carrot cake and lime ice cream. The more creative you are in your combinations, the tastier the dessert will be.
ReplyDeletewow. it's really a good contribution to us guys not good at icecream, you know i did some cakes before but the taste it's not good, then i quit, so if you have interesting, you can load to catier rings
ReplyDeletevisit my new make up, give me your advice, Thanks!
